Sonny Lubick Steakhouse opens in downtown Fort Collins

Fort Collins, Colo., October 28, 2008 – After months of anticipation, Sonny Lubick Steakhouse will open to the public Friday, October 31 in downtown Fort Collins. Offering an innovative, yet traditional, menu and a polished Colorado casual ambiance, the restaurant that bears the name of one of Colorado’s most infamous sports legends will finally open its doors.

“We haven’t even opened yet and already there has been so much excitement building in the community,” Sonny Lubick said. “It has been an exciting endeavor for all of us in Fort Collins and I just hope it lives up to the expectations.”

With the help of more than 20 local investors, Sonny Lubick Steakhouse began construction earlier this year, after the iconic Nico’s Catacombs closed in March 2008. Toby Sheppard, former executive chef of the Catacombs, teamed up with Rick Callan, a local commercial real estate broker and longtime Lubick friend, to explore the option of opening a Sonny Lubick Steakhouse – an idea Callan had been sitting on for years. Together with Lubick, Callan and Sheppard researched the new endeavor, traveling to Chicago and Denver to visit other local high-end restaurants bearing the name of sports icons Mike Ditka and John Elway.

The idea was not to create just an average sports bar; but instead, a locally inspired, owned and operated venue that would continue the tradition of other great restaurants in downtown Fort Collins. The uniqueness of Sonny Lubick Steakhouse came from years of watching Sonny inspire those around him, both on and off the field.

Located in the heart of downtown Fort Collins at 115 S. College Ave., Sonny Lubick Steakhouse will be open Monday through Thursday from 4– 11 p.m. and Friday through Saturday from 4 p.m. to midnight, with happy hour drink specials from 4 – 7 p.m. Monday through Friday. Sonny Lubick Steakhouse will open as a dinner-only venue but will begin serving lunch early next year.

“A lot of people have put in so much time and effort to make this come together,” Lubick said. “I’m extremely proud to be a part of it.”
