Justin Brophy

Justin Brophy was raised in Los Alamos, New Mexico where he began his career in the restaurant industry at The Hill Diner at age fifteen. After three years, he moved to Santa Fe where he attended the Santa Fe Community College and graduated with a degree in Culinary Arts. During his education, Justin had the opportunity to work in several different restaurant settings including The Santa Fe Bar & Grill, De Colores, and Rooftop Pizzeria. After graduating, Justin moved to Fort Collins where he began his culinary experience with Toby Sheppard at Nico’s Catacombs. The Catacombs closed in 2008, and Justin became the Sous Chef of the popular local brewery C.B. and Potts. But when the Sonny Lubick Steakhouse stood poised to open in October 2008, Justin knew he could not refuse the opportunity to work with such a reputable and prestigious restaurant.

Throughout his time with Toby, Justin has proved himself a knowledgeable and innovative chef presenting inspired, contemporary dishes. Toby confidently promoted Justin from Sous Chef to the Head Chef position in January of 2009.
