Sonny Lubick

Sonny Lubick Steakhouse started with a vision. Longtime Lubick friend Rick Callan had the idea for a Sonny Lubick Steakhouse here in Fort Collins for years, envisioning a place where people could enjoy great food, good company and a warm atmosphere. Callan pitched the thought to Lubick, but it wasn't until years later that the idea really began to take flight, when the iconic Nico's Catacombs closed its doors in March 2008, after serving downtown Fort Collins for 35 years.

Toby Sheppard, former executive chef of the Catacombs, called upon Callan, an active community member, local commercial real estate broker and friend, to investigate options, and a partnership was formed. The new venture took off quickly from there. Team Lubick — Lubick, Callan and Sheppard — enlisted the help of more than 20 local investors to finance the restaurant venture and brought in local designers and contractors, Oglesby-Sherman Design and Drahota Construction, to re-invent the former subterranean home of the Catacombs. They even ventured to Denver and Chicago to research their new endeavor, visiting the likes of Ditka's and Elway's — other sports legends that lent their name to high-end local restaurants. While Sheppard is no longer with the restaurant, a new management team seeks to build on what he and others began.

The idea of Sonny Lubick Steakhouse was to create a locally inspired, owned and operated venue that would continue the tradition of other great restaurants in downtown Fort Collins. The uniqueness of Sonny Lubick Steakhouse came from years of watching Sonny inspire those around him, both on and off the field. It was decided that the restaurant that bears his name would have a "polished casual" atmosphere — classy and sophisticated, yet modest and traditional — with a menu offering a new twist on conventional steakhouse fare. In addition to traditional Certified Angus Beef cuts such as slow-roasted Prime Rib and hand-cut New York Strip and Filet Mignon steaks, the menu includes chef-inspired specialties, vegetarian dishes and gluten-free options. The restaurant is also home to one of the best wine cellars in Fort Collins.

Sonny Lubick's Legacy is known not only in the Fort Collins community, but throughout Colorado and the nation. Sonny Lubick Steakhouse hopes to become another legacy under the Lubick name, a casually elegant spot with a modest hometown attitude where friends and family can enjoy outstanding food, great drinks and good company, is located right in the heart of downtown Fort Collins.
